Christof MartiandCopilot d10df85f84 build: Retain macOS sanity VM memory diagnostics (#338853 )

Capture exact OS/build identity, system memory pressure and process memory attribution before, during and after macOS sanity tests. Keep diagnostic failures visible as warnings and preserve test exit codes, existing timeouts and pool selection. Add focused regression tests and document the logs.
